How to bake one of our pies:

If baking a 2 crust pie, brush the top with water and sprinkle with sugar.  Skip this step for crumb pies.  Place on a baking sheet on the second rack from the bottom of the oven at 375*.  Bake for approx. 1 hour 20 minutes or until browned, filling is thick and apples are tender when poked with a knife.  (Your pie will probably run over.  Don't worry, this is normal!)
Pie will be runny if cut before cooled some.
Best if eaten out of the pan with a fork and 1/2 gallon of ice cream - preferably while hiding from the kids (not that I'd even consider doing this!!!)!
ENJOY!

School Tour Apple Cookie Recipe

1/2 cup crisco
1 1/3 brown sugar
1 egg
1/2 tsp salt
2 cups flour
1 1/4 cup rolled oats
1 tsp baking soda

1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/4 cup apple cider
1 cup chopped unpeeled apples
1 cup raisins

Cream cisco & brown sugar. Add egg. Mix in dry ingredients. Add apples, cider & raisins. Drop on cookie sheet and bake at 375 for 10 - 12 minutes.

Apricot Oatmeal Bars
1 cup flour
1 cup rolled oats (quick or old fashioned)
2/3 cup packed brown sugar
1/4 tsp baking soda
1/2 cup margarine or butter
apricot preserves
Combine flour, oats, brown sugar & baking soda. Cut in margarine or butter until mixure resembles course crumbs. Reserve about 1/2 the mixture (or maybe just a little less). Press remaining mixture into the bottom of an ungreased 9x9 pan. Spread with apricot preserves (I buy mine from Aldis and use about 2/3 of the jar. As you can see, I am not exact at times when baking!) Top with remaining crumbs and press down lightly. Bake at 350 for 30 to 35 minutes. Cool, cut and enjoy!
